sushi rice
1. wash sushi rice in cold water and drain.
2. put the washed rice into a deep pan, add water(3), and put the lid on.
3. leave it for 10 minites.
4. put the pan on low heat. after it boils, put it onto medium heat.
5. once all the bubbles diappear, put it onto low heat. after 2 minutes, put it off the heat. stir well and keep the lid on.
 
ma-po tofu
1. cut tofu into small cubes, simmer them for 1-2 minutes. If cooked too much, tofu becomes sour so try not to do so. drain them in a colander.
2. put soya mince into a bowl, pour hot water into it. after 5 minites, drain it in a colander, press it with a spoon to get rid of surplus water.
3. grind or mince ginger/garlic.
4. heat a pan, put sunflower oil(1), ginger, garlic and dried chilli. try not to burn garlic.
5. add blackbean sauce and hoisin sauce.
6. add soya mince and mix it with the ingredients in the pan. fry the seasoned mince very well until the flabour is fully brought out
7. add sake, stir the mince a little bit, and add water(1) into the pan.
8. add soy sauce and sugar, and cooked tofu.
9. boil the mixture for 2 minites.
10. put the pan off the heat, add the mixture of cornstarch and water(2) into the pan, stir well.
11. put the pan back on the heat, heat until the liquid becomes transparent.
12. add sunflower oil(2) and put the pan off the heat after 20 seconds. This makes the tofu cubes softer.
13. add black pepper, chopped spring onions, sesame oil, and chilli oil
